Pomegranate & Mint Couscous Salad

• 200g of Artisan Grains 4-Grain Couscous (try our Tricoloured Couscous for lots of fun colour!)
• 2 large pomegranates, seeds separated
• 1 large bushel of mint (1 cup of finely chopped fresh mint leaves)
• 1 teaspoon of Sumac spice
• salt and pepper


Step 1

Prepare the 4-Grain Couscous according to pack instructions.

Step 2

Mix the couscous with the pomegranate seeds, chopped mint, sumac, salt and pepper.

Step 3

Toss the salad and serve as a part of a main meal or as a side dish.
